Ingredients:
- 250g Meliza’s Plantain Casarecce Pasta
- 2 large red bell peppers, roasted
- 1 small red onion
- 2 garlic cloves
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt (optional, to taste)
- Black pepper to taste
Method:
- Cook pasta in boiling water until al dente (7–9 minutes). Drain and set aside.
- Blend roasted peppers, onion, garlic, and paprika until smooth.
- Heat olive oil in a pan, add the blended mix, and simmer for 8–10 minutes.
- Add pasta to sauce and mix gently.
- Serve warm, optionally garnished with chilli flakes and Parmesan cheese.
