A pasta twist on West Africa’s most famous dish, rich with tomato and spice.
Ingredients:
- 250g Meliza’s Plantain Casarecce Pasta
- 1 red bell pepper
- 2 tomatoes
- 1/2 red onion (sliced and blended)
- 2 garlic cloves
- 1 tbsp tomato paste
- 1 tsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- Salt (optional, to taste)
- 3 tbsp oil
Method:
- Blend pepper, tomato, onion, and garlic until smooth.
- Cook pasta al dente, drain and set aside.
- In a pot, heat oil, fry sliced onion, add tomato paste and fry for 2 mins.
- Pour in blended mix and spices. Cook until thick.
- Mix in pasta. Simmer for 3 mins. Serve hot.
