Casarecce Pasta Jollof-Style

A pasta twist on West Africa’s most famous dish, rich with tomato and spice.

Ingredients:

  • 250g Meliza’s Plantain Casarecce Pasta
  • 1 red bell pepper
  • 2 tomatoes
  • 1/2 red onion (sliced and blended)
  • 2 garlic cloves
  • 1 tbsp tomato paste
  • 1 tsp curry powder
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt (optional, to taste)
  • 3 tbsp oil

Method:

  1. Blend pepper, tomato, onion, and garlic until smooth.
  2. Cook pasta al dente, drain and set aside.
  3. In a pot, heat oil, fry sliced onion, add tomato paste and fry for 2 mins.
  4. Pour in blended mix and spices. Cook until thick.
  5. Mix in pasta. Simmer for 3 mins. Serve hot.
